Spring Food Competition #Spring brings renewal – Green onions and this might be perfect for you!
I remember going to Suizhong City (near Nandaihe) once to attend a friend's wedding. After the banquet, we went to the beach, and the weather in Nandaihe in March and April wasn't very enjoyable, it was too cold.
We hurried back to my friend's house, and my friend was warm and hospitable, asking what we wanted for dinner, and everyone suggested eating at home, with simple home-cooked dishes.
Then, my friend started busy in the kitchen.
At dinner time, my friend served four plates of green onion and oyster stir-fry, including green onion and oyster stir-fry, green onion and squid stir-fry, green onion and shrimp stir-fry, and green onion and egg stir-fry. We looked at each other with puzzled expressions. My friend explained: 'In his parents' generation, when spring was just beginning, there weren't many green vegetables to eat, and green onions were one of them. Suizhong is located by the sea, and using green onions to stir-fry seafood is considered a local specialty. More importantly, the recipes are simple, and he doesn't know how to make more complicated dishes'.
Even so, I tried it, and it was really good, especially the green onion and oyster stir-fry, with one word to describe it: 'Fresh'.
After a full meal and a few drinks, I asked him for the recipe, and his answer was exactly as he said, the recipe is really simple. It involves heating up the pan, adding green onions, then adding oysters, then adding a little salt, and stir-frying for a few times before serving.
Spring has come, and everything is reviving. Let's have a plate of green onion and oyster stir-fry, a bottle of high-proof wine, and of course, good company to spend the evening with.
