Method:

Shaking Chicken with Wood Ear Mushrooms

Ingredients: Avocados 1; black pepper grains; chicken 1 leg; tomatoes 1; sesame greens (optional); salt;; pepper; olive oil; roasted sesame seeds; oyster sauce

Method

1. Debone and de-skin the chicken leg and cut it into uniform small pieces, marinate with salt, and pepper for 30 minutes

3. Heat oil in a wok, don't add too much oil, just enough to spread the bottom of the wok, add the marinated chicken and stir-fry until cooked, then set aside to cool slightly, add the avocado and tomatoes, sprinkle with roasted sesame seeds, black pepper grains and 1 tablespoon of olive oil and mix well

Shiitake Mushrooms with Chives

Ingredients: Chives, Shiitake mushrooms, oil, salt, MSG, scallions

Method:

1. Wash and slice the shiitake mushrooms; cut the chives into small segments.

2. Heat oil in a pot with a few scallion whites to fragrant, add the shiitake mushrooms, stir-fry for a while, add, add salt and MSG to season, and stir-fry to finish.

Shiitake Mushrooms with Lotus Root

Method:

1. Cut the lotus root into sections, peel and cut into two open circles, place them flat on the cutting board, with the protruding side facing upwards, first cut 0.3 cm thick (do not cut through), then cut 0.3 cm thick (cut through), do this until finished. Use a little salt to soften.

2. Debone and wash the shiitake mushrooms, cut the large ones into small pieces and squeeze out the moisture. Heat flower oil over high heat, add the shiitake mushrooms and stir-fry, add, add salt and MSG, stir-fry to flavor, and transfer to a dish to cool.

3. Heat oil in a wok, wrap the lotus root with egg slurry, use chopsticks to one by one into the oil pan, fry until the surface is solidified and turns pale yellow, take it out and remove the egg slurry. Then heat oil in a wok, re-fry the lotus root until golden brown, filter out the oil when it is fully cooked, sprinkle with flower and drizzle with and stir-fry evenly.
