Step-by-step instructions:

First step: Prepare 6 eggs, don't be scared by the number of eggs, cakes need to be fluffy and delicious, and a lot of it is thanks to the eggs. Use a strainer to separate the egg whites and egg yolks. It's strange why there are egg yolk separators everywhere, but a strainer is more practical.

Second step: Heat 70g of corn oil to 70 degrees (it's best to use corn oil for making cakes, corn oil has a non-thick concentration, it's clear and transparent, so the cake will be soft and not greasy). Pour it into a large bowl, and quickly sift in 85g of low-gluten flour, 10g of corn starch (when adding flour or starch, it's important to sift it first, to avoid grainy appearance and ensure a delicate texture), and then stir with 60g of milk and 6 egg yolks. Note that you should only add egg yolks, not egg whites.

Third step: Stir until there are no grains, turning into a smooth paste, just like in my picture, all ingredients are completely fused together, and it can't break when lifted.

Fourth step: Take a lemon in half, add a few drops of lemon juice to the egg white, which can effectively remove the egg smell, then use 4 chopsticks to quickly whip 15 minutes, adding white sugar three times in the middle, turning into a white creamy state, stop whipping when a chopstick is inserted and stands upright.

Fifth step: Pour the whipped egg white into the egg yolk, and use a spatula to stir it evenly, remember to stir it, not to stir it, until the egg white and egg yolk are completely fused together.

Sixth step: Take a cake pan, pad with a piece of oil paper, this is to prevent sticking. Quickly pour the evenly stirred cake batter into the pan, and shake it up and down a few times to remove the bubbles, and put it in the oven. Add a small bowl of water to the bottom of the pan to increase the humidity of the oven. The temperature is set to 140 degrees and bake for 70 minutes.

If there's no oven, use a steamer, the effect is the same. If steaming, remember to brush a layer of edible oil on the pot wall and then pour the cake batter into it, otherwise it will stick to the pot, cover it with a lid and then put it in the pot to steam.
