Recipe for Chicken Soup Wontons
Chicken soup wontons are a famous snack, with a vibrant color, smooth and tender texture. The flavor is fresh and not greasy, with authentic taste. Adding chopped cilantro enhances the taste.

Main Ingredients
500g fine flour, 150g lean pork.
Accessories
50g sesame oil, 100g starch, 2 eggs, 50ml flower pepper water, seaweed, sprouts (or cilantro), MSG, ginger paste, shrimp roe, pepper powder, chopped green onion, salt, soy sauce, chicken soup (all to taste)

Process
1. Filling Preparation: Chop and thoroughly mince the pork, then add to a bowl and mix with flower pepper water to form a paste. Add ginger paste, fine salt, and MSG, and mix well to form the filling.
2. Skin Preparation: Place the flour in a bowl, crack in the eggs, add 200ml of water and mix into a dough, knead and smooth, cover with damp cloth and let it rest for about 30 minutes, then knead it again on the working surface, roll it into thin slices of 0.5mm thickness (the thinner, the better), sprinkle with starch powder while rolling, use a knife to cut into long strips of 6cm wide, then cut diagonally with a 6cm upper end and 3cm lower end into a ladder shape (approximately 250-300 pieces).
3. Filling and Wrapping: With one hand holding the dough skin, use chopsticks (or a wooden piece) to spread the prepared filling (about 2g) on one corner of the dough skin, wrap the dough skin around it. Roll the filling inward, and then pinch the two lower ends outward to form a cat ear shape.
4. Cooking: Bring water to a boil in a pot, add the boiled wontons when they float, serve in bowls with appropriate amounts of soy sauce, MSG, add to chicken soup, take out the required amount of wontons, add seaweed (small pieces), sprouts, and shrimp roe, drizzle with sesame oil.
