Detailed Recipe for Egg Dumplings (with Yellow Cucumber Egg Dumpling Soup Recipe)
When it comes to dumplings, I always think of my mother's busy back in the kitchen. The golden surface, plump belly, and subtle yellowish skin—whether steamed or cooked in hot pot or soup, they are incredibly delicious and flavorful.
Every time I eat dumplings, I remember my mother and her cooking, making overseas Chinese people long for the days when the family gathered around to roast meat and chat while enjoying steaming dumplings.
Egg dumplings are a traditional Chinese snack and a must-have food for family gatherings during the New Year. Many people find them complicated and require patience. Nowadays, fewer people make them. However, as long as you master this method, everyone can easily make egg dumplings.
Required materials: Pork mince, eggs, scallions, ginger, salt, light soy sauce, oyster sauce, sesame oil, ground pepper,(liao jiu - rice wine), starch
1Chop the pork into minced meat (use a 7:3 ratio of lean to fat meat to avoid dryness or greasiness).
2Slice the ginger and add a little water to make ginger water.
3Add scallions, salt, light soy sauce, oyster sauce, sesame oil, ground pepper, rice wine, and starch to the minced pork and mix well.
4Add ginger water three times, and make sure the meat absorbs the water completely after each addition.
5Whisk eggs and add a little salt.
6Use a spoon and brush it with cooking oil. Heat over low heat until the spoon smokes.
7Scoop a spoonful of egg liquid and rotate the spoon to evenly coat the egg liquid.
8When the egg liquid is semi-solid, add the meat.
9Fold the egg skin over and press the edges with chopsticks to make one egg dumpling.
10Finished egg dumplings can be frozen in the refrigerator. When you want to eat them, you can cook them directly and make as many as you want, which is very convenient.
Yellow Cucumber Egg Dumpling Soup
In a pot, add water, ginger slices, and scallion segments. Cut the cucumber into thick slices, bring the water to a boil, add egg dumplings and cucumber, cook until the egg dumplings are cooked through, then add appropriate amount of salt, chicken broth, sesame oil for seasoning, and garnish with chopped scallions.
