These four home-cooked dishes and two quick soups are easy to make and fast, and it only takes one look to learn. It's also a headache to cook for the children, because it’s inconvenient to go to the supermarket, and the ingredients are limited.

Since starting to cook at home, I've never made as many meals as this month, and I'm eating three meals a day every day! It's really exhausting to keep up with it for over a month. Recently, my dad has also returned to work for two weeks, and he doesn't come home for lunch and dinner, so it's just me and my two children cooking. It's a little easier now, and we only make two dishes and a soup every day.

Sharing four home-cooked dishes, two quick soups, and common ingredients, simple methods. Although we don't have fancy big fish and big meat, we still have both vegetables and meat. The kids love them, and so do I. I also cook two dishes in the morning, steam rice, and pack it for my dad to eat at work, so he doesn't need to order takeout or heat up leftovers.

Clay pot rice, seaweed egg drop soup, chicken chunks with chestnuts, broccoli and mushrooms stir-fried with bamboo shoots.

This lunch consists of two dishes, one soup, and one main dish. My two-year-old loves chestnuts, so I freeze some chestnuts in small pieces, and I'll take them out and cook them with chicken or pork belly when I want to eat them. Wood ear and bamboo shoots are also commonly stored ingredients at home, often combined with fresh vegetables to make a simple stir-fry, which is nutritious and tasty. Seaweed egg drop soup is also easy to make and fast, and it's a good meal for families.

Chicken chunks with chestnuts is one of my daughter's favorite home-cooked dishes, and it's also a hearty dish. I like to make it with chicken thighs because they are plentiful and tender, and they taste even better.

Broccoli and mushrooms stir-fried with bamboo shoots

The most stocked ingredients in the refrigerator are broccoli and eggs. There aren't many tomatoes, but the children love tomato and eggs stir-fried, so I often add some broccoli to it, which not only enriches the color, but also makes the broccoli taste better when combined with tomato juice.

Curried potatoes and chicken chunks

Potatoes and carrots are peeled and cut into small pieces, washed with water, and set aside. Chicken thighs are cut into small pieces and put in a small pot with water to remove the scum, then fished out and set aside. On a hot stove, put a little oil and stir-fry the chopped scallion and ginger, then add the chicken chunks and stir-fry until half cooked, then add the potato chunks and carrot chunks, pour in a bowl of water, add curry blocks, bring to a boil, stir-fry the melted curry evenly, then turn the heat down low and simmer for a long time to make the potatoes and chicken chunks fully cooked and flavored. The remaining soup can be used to mix rice.

Eggs three are put in a bowl and stirred with a little salt. The tomatoes are washed and cut into small pieces, and the broccoli is cut into small pieces and put in a pot of boiling water to blanch, then stir-fry the tomato and broccoli pieces in a hot pan, and if the soup is not enough, add a little water. Finally, add the blanched broccoli, add salt to season, and stir-fry evenly.

Winter melon and meatball soup

Lean meat is mixed with eggs, salt, sugar, white pepper, and a little bit of soy sauce, stirred until sticky, and set aside. On a pot of boiling water, put winter melon peeled and cut into thin slices and cook until it's tender. After the water boils, add the meat mixture and cook until the meatballs are cooked. Add salt and a little white pepper to season, and it's done.

These four home-cooked dishes and two quick soups are what I've been eating for lunch these two days. They are easy to make and fast, and it only takes one look to learn. It's also a headache to cook for the children, because it's inconvenient to go to the supermarket, and the ingredients are limited. Fortunately, these dishes are still liked by the children, and we can finish three meals a day without wasting anything.
