The peony is famous throughout the world because of Luoyang, and it is known as ‘a thousand-year imperial capital and peony flower city’. It has been honored as China’s Excellent Tourist City, National Civilized City, and one of China’s Ten Best Charming Cities. At the same time, Luoyang also hides many delicacies. Luoyang Water Banquet (Water)
Luoyang Water Banquet is a traditional Luoyang delicacy with a long history, renowned in ancient and modern times, and has flourished for a thousand years. As a traditional Luoyang dietary custom, Luoyang Water Banquet, along with the Longmen Grottoes and the Luoyang Peony Festival, constitutes Luoyang’s ‘Three Wonders’. The term ‘water banquet’ has two meanings: one is that it is made with soup and water, and the other is that it is eaten in a sequence, like flowing water, hence the name ‘Water Banquet’. The Water Banquet consists of 24 dishes, commonly known as ‘Three Eight Water Banquets’. First, 8 cold dishes and appetizers are served, with 4 cold dishes being meat and 4 being vegetarian. Then, 16 hot dishes are served, using different types of blue-and-white porcelain bowls to hold them. The 16 dishes include 4 pressed table dishes. The other 12 dishes are grouped into three sets with similar flavors, and each group has a main dish leading the way. This is known as ‘eating the main dish first’, and it’s like flowing clouds and water.
Green Bean Noodles ()

Green Bean Noodles are the most common and flavorful snack in Luoyang and one of China’s famous snacks, characterized by their ease of digestion. The method is to heat soybean or black soybean juice, then add a little oil, boil it, and then put in the noodles. Don’t stop stirring, and finally add seasonings such as salt, green onion, green peas, celery, chives, chili peppers, etc. There is a peculiar custom when eating green bean noodles, which is that the noodles eaten the next day are more delicious.
River Carp and White Sturgeon ()
River Carp and White Sturgeon (Luoyang River Carp and White Sturgeon) ‘Luoyang River Carp and White Sturgeon are as expensive as beef and lamb’, River Carp are a famous fish in the Yellow River, Luoyang River Carp are tender and delicious, rich in nutrition, and known both at home and abroad. The famous dish ‘River Carp Jumping Dragon’ Gate is beautiful in shape and full of auspicious meaning. The cooked river carp is arched in the bowl, lifelike, as if it wants to jump. The main ingredients of Hot Pepper Soup are fine flour noodles, vermicelli, fatty pork, and seasonings include peanuts, taro, yam, goldthread, wood ear fungus, green onion, garlic, and noodles soaked in gluten, along with seasonings including sugar, flower pepper, fennel, dried ginger, star anise, black pepper, salt, and soy sauce.
