Good breakfast shops' youtiao are freshly fried and sold, and to ensure customer peace of mind, they often place bucket-filled oil nearby for customers to see, letting them know their youtiao are made with reliable oil. While some vendors repeatedly use the same oil and their pots and pans are deeply blackened, it's recommended to avoid buying youtiao where the oil appears dark and burnt.
The traditional method of making youtiao is to use ordinary flour plus high-gluten flour, plus baking powder, baking soda, yeast powder, salt, sugar, use warm water to make dough after it's well-mixed, then brush oil on it, let it ferment for 2 times its size, then flatten it, cut it into small pieces, let it ferment a little bit more, and then stack it in two layers, using chopsticks to stick water and press, and then put it into the pot to fry. This process is complicated and time-consuming, and if any step is not carefully executed, the resulting youtiao will not be delicious! This is why many friends often bake breakfast pancakes at home instead of making youtiao!

First step: First, we prepare 300g of ordinary flour, add 30g of sugar, then pour in 15ml of edible oil, mix with 250ml of boiling water while mixing, first melt the sugar, stir until it becomes a cottony state
Add 2 eggs, because eggs can make the dough fluffy, using eggs instead of additives, the resulting youtiao will be healthier and more nutritious, stir into a delicate batter, and then stir in one direction to make the batter rise,
Second step: Then choose your favorite piping bag, if you don't have a piping bag, a slightly thicker pastry bag is also okay. First, put the bag into a cup, then pour all the batter into it, and then squeeze out all the air with your hand, and tighten the edge with your fingers.
Third step: In a wok, add a lot of edible oil, when the oil temperature is about 40% hot, immediately press a small amount of hot oil with a chopstick to pull out the batter, and youtiao will form. 1. Sugar is mainly to help with fermentation and also to make the youtiao golden yellow. If the sugar is too little, the youtiao won't be golden yellow.
2. When frying youtiao, the oil temperature needs to be a little higher, about 180 degrees. When the raw dough is put into the pot, it will immediately float. If the oil temperature is low, the raw dough will absorb a lot of oil and affect its rising and expansion.
