Orange Juice Winter Melon

Ingredients

Winter melon as needed, orange juice as needed, white sugar a little, sweet orange a little, lemon a little

Instructions

1. Wash and peel and remove the seeds from the winter melon, cut into strips about 1cm thick

2. Add water to the pot, bring to a boil, add the cut winter melon strips, after boiling again, take out and cool

3. Immerse in chilled sparkling water with ice cubes

Lamb and Potato

Ingredients: Lamb leg; potato; tomatoes; seasonings: vegetable oil; salt; ginger; light soy sauce; flower pepper; black pepper; chili paste

Instructions

Cut the lamb into pieces, peel and wash the potatoes, soak chili paste, cut into segments, wash and slice tomatoes, ginger

Heat oil in a pot, heat the oil to 80%, add lamb and stir-fry to release moisture and aroma, add flower pepper and stir-fry evenly, add ginger, chili paste, light soy sauce and stir-fry evenly

Add tomatoes and stir-fry to release moisture, add salt and stir-fry evenly, add water and potato blocks to boil, reduce the heat to small and cook until the potatoes are cooked through, increase the heat to thicken the sauce, add black pepper and stir-fry evenly

Fragrant Mushroom and Egg

Materials: Fragrant mushrooms, eggs, light soy sauce, old soy sauce, salt, sugar, water starch

Instructions

1. Wash and slice fragrant mushrooms, whisk eggs and add light soy sauce and water

2. Heat oil in a pot, pour in egg liquid and stir-fry, use a spatula to make it into pieces, take it out to set aside

3. Pour oil again in the pot, heat over high heat, pour in fragrant mushroom slices and stir-fry

4. Add light soy sauce, old soy sauce, salt and sugar and stir-fry, add a little water to boil

5. Pour in the egg to mix evenly, finally drizzle in water starch to thicken

Beer Fish

Materials: 1 whole carp, 1 can of beer, tomatoes, persimmon peppers, peanut oil, salt, scallions, ginger, garlic, old soy sauce, bean sauce, fermented fish sauce

Instructions

1. Wash the fish, remove the internal organs, cut into large pieces and drain water

2. Cut tomatoes into small pieces, cut peppers into pieces, chop scallions, ginger, garlic, chili peppers, heat oil in a pot to 80%, put the cut fish pieces into a golden brown and take them out to set aside

3. Heat oil in another pot to 60%, put scallions, ginger, garlic, dried red chili peppers into a pot and stir-fry

4. Add beer and old soy sauce, bring to a boil, put fish pieces into the pot, after boiling on high heat, reduce the heat to continue cooking

5. About 15 minutes later, add tomatoes and fermented fish sauce, salt, medium-high heat, until the sauce becomes thick
