Ingredients

Green bean cake skin:

130g sticky rice flour / 20g cornstarch / 10g vegetable oil / 20g white sugar / 10g grass fern powder / 100g-120g boiling water

Filling:

60g salted duck egg yolk / 50g meat floss / 13g sweet salad dressing

Steps

1Dissolve 100g grass fern powder in 100g boiling water, as shown in the picture. Because I couldn’t find good quality grass fern, I bought grass fern powder, which is convenient and simple. Many people don’t like the special taste of grass fern, you can use pea green juice instead.

2Put grass fern powder, sticky rice flour, cornstarch, vegetable oil, and white sugar into a large bowl and mix with a spoon until.

3Knead into a smooth dough, as shown in the picture. The dough is a little dry now. The next step is the most important step.

4Take out 20g of the dough, flatten it, and put it in a small pot to cook until the dough floats to the surface, then the dough is cooked.

5Put the cooked dough and the raw dough together and knead into a smooth dough. After this operation, the dough becomes very soft and not easy to crack.

This traditional method makes the green bean cake very moist, you must not miss it.

6Divide the dough into 8 pieces, this amount is for making 8 pieces, if you want to make more, you can double it. Shape the dough into round balls and cover with plastic film to prevent drying.

7Next, let’s make the filling. Put 60g of salted duck egg yolk into a large bowl and mash it. My salted duck egg yolk came from a mature salted duck egg, the oily salted duck egg is especially fragrant, it’s so delicious to eat a little.

8Measure 50g meat floss and mix it with salted duck egg yolk.

9Squeeze 13g sweet salad dressing and knead it with meat floss and salted duck egg yolk until it forms a ball. The amount of salad dressing depends on the state of meat floss and salted duck egg yolk.

10Press the salted duck egg yolk and meat floss into a ball and put it in a plate.

11Wrap the salted duck egg yolk and meat floss into the dough and seal the edge tightly.

12Boil a pot of boiling water, put the finished green bean cake on the water, steam for 10 minutes.

13Brush vegetable oil on the surface of the steamed green bean cake, brush it while it’s hot, so that the green bean cake can absorb vegetable oil, and it won’t stick to your hands when it cools down.
